I am trying to make a cookie mold/cookie press. I am practicing with the clipart in Aspire. How do I make the pocket (mold) deeper (maybe 0.5" deep)? I thought about using the 0.25" EM to rough out the pocket to 0.5" deep. Then set Z0 to the bottom of that pocket. Then use the Finish Machining Toolpath with a small Ball Nose to make the pattern. Is that the correct way to do it OR is there a better way?

If that ball nose won't reach to "get there" on its own, it's not gonna reach into a deeper pocket because the collet/spindle will strike the walls of the straight sided pocket that you cut (first)

What I would do... I used 1/8" tapered ball nose. Better clearance and stronger. You can get them cheap. 1. Select cookie shape and draw a bounder around it with Create Vector Boundry. Then use Offset Vector to create a little space around cookie. I used slightly larger than bit width, 0.06. 2. Draw another vector with offset vector to be inside rim of cutter. Do it again to be outside of cutter. 3. Select the 2 rim vectors and use Create A Shape from Vector Outlines. Make it as deep as you want the cutter. 4. Mill 3D and cut out. Cookie Cutter test example.zip (1.96 MB)(ZIP file because crv3d file too big)

I believe under the modeling tab and properties, you can set the model at any depth you like. You will definitely want to use a roughing finish path. A 1/4" upcut endmill would be fine for this.
