My AR16 has table limits of 1210mm x 1210mm, which is actually just under 48" square. Is my cut profile (the centerline of the bit) 1210mm x 1210mm, or does the diameter of the bit need to be wtihin the 1210mm square area?

I believe it is the official max travel for the spindle centerline. I say official because it may be slightly impacted by the actual location of the metal tabs triggering the proximity switches at the end of travel.
1210mm minus 2 x the cutter radius (ie its diameter) is then the max workpiece dimension you can cut out, for example using a profile tool path.

There are posts out there on this board about changing the 1210 to 1220, but I'm not sure the method shown is do-able on the HUST controller. I'm thinking that setting is behind a password. I'm not at my shop, so I can't tell
